The original switch was probably just ON/OFF
The new switch is HI/LO
That is probably where the problem is. Either only use 2 of the wires for on/off, or get a dual filament bulb and wire harness for the headlight, and use the dimmer switch as a dimmer switch. You could look at a K1 or K2 z50 wire diagram, or a K0-K1 CT70 wire diagram, to see how the dimmer switch/headlight is wired.

...or, source a on/off switch
